Grande Nachos

In my house, we take Taco Tuesday very seriously! Mexican style dishes are one of my most favorites to cook. I'm not always able to, but I try making Mexican on Tuesday's! It was amazing how Cinco de Mayo fell on Tuesday this year. Since we were in lockdown I had to be sure I covered all of the important parts of the meal. We had homemade guacamole, grande nachos, Mexican rice, and margaritas!  I'll share all of those recipes with you over the next several days. 

I knew that I wanted to make nachos for dinner, but I didn't want to make simple nachos. When I went to the grocery I started looking around to see what I could find to use as my chip. I came across these. 
I thought these would be perfect. I had never used them before so I was excited to try something new. 
First, I browned, drained, and seasoned the meat with taco seasoning. 
I preheated my oven to 350*. I was able to fit 6 of the tostadas on a baking sheet. Then, I topped to tostadas with the cooked taco meat and then sprinkled them with shredded cheese. 
I placed the Grande Nachos in the oven until the cheese had melted. This took a couple of minutes.
Once you pull them out of the oven you can then top them with whatever toppings your family prefers. I added my homemade guacamole, but you could add store-bought, sour cream, tomatoes, and black olives. 
They were so good and didn't last long. The most difficult thing about this dish was figuring out how to eat them. Lol!! My daughter picked the whole thing up like a pizza and ate it. My husband and I used a fork and broke pieces off a little at a time. No one was complaining, though. They were too busy chewing!! 

Ingredients:
2 lbs hamburger meat
2 taco seasoning packs
1 bag of tostadas 
shredded cheese 
sour cream
guacamole 
tomatoes 
black olives 

Directions:

1. Preheat oven to 350*
2. Brown the hamburger meat and drain it. Return the meat to the pan and cook along with the taco seasoning following the directions on the package. 
3. Place your tostadas on a large cookie sheet. My largest pan was able to hold 6 tostadas. Top the tostadas with the meat and then the shredded cheese. Place the pan in the oven long enough to let the cheese melt. Don't walk off too far because you don't want them to burn. 
4. Pull the Grande Nachos out of the oven and top them with guacamole, sour cream, tomatoes, and black olives. Or whatever your family prefers. Enjoy!!
