Hard-Boiled Eggs

One of the main reasons I decided to make this blog was for my girls. I want them to have somewhere to go and see all of the recipes I have made through the years. I have several dishes that I'll make because my family loves them and I have perfected them to our tastes through the years, but I am also ALWAYS on the lookout for a new recipe that just blows me away. You'll never hear anyone in my family ever say, "Mom, you're making that again?!" because I'll rarely make something the same within three months of each other.

One of my favorite past times is reading through my cookbooks. I will make notes by the recipes I have made. I will include if we really liked it, what I may add to the recipe, what I would change next time, etc... my cookbooks are my treasures! On this blog, I'm going to post our favorite recipes, but I'm also going to leave my girls' tips and tricks to help them be successful in the kitchen! Today I'm going to "teach" how I boil eggs. I use a good bit of boiled eggs. I put them in my chicken salad, tuna fish, different pasta salads, and my potato salad. One of my favorite sandwiches to make is egg salad sandwiches with lettuce and tomato. And you can't go wrong with deviled eggs as a side!


If you want hard-boiled eggs that peel with ease you'll want your eggs to be at least a week old if not longer. The fresher the egg the harder it is to get the shell off. Since we use so many eggs I will buy 18 at a time. Because of this I always have aged eggs in my fridge. 

  • Place your desired amount of eggs in a pot and cover with cold water. Make sure your water level is about an inch above your eggs so they are good and covered.
  • Place the lid on the eggs and turn your burner on high to boil. 
  • Once your eggs have started to boil, remove the lid, and allow them to boil for 3 minutes. 
  • Remove the pan from the burner, cover with the lid, and allow the eggs to sit in the hot water for 20 minutes. 
  • Drain the eggs and let the water run over the eggs to cool them off. I usually let them sit in cool water for a couple of minutes before I handle them. 
  • Crack, peel, and enjoy!!
Whether I need 3 boiled eggs or up to 18 this method works for any job!!
